¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

Mi interés por la cerveza empezó a una edad temprana. En Bélgica está permitido beber cerveza a los 16 años, y así lo hice, visitando mi primera fábrica de cerveza a los 17 años. Siempre me han interesado todos los aspectos de la cerveza: historia, ingredientes, producción, estilos, etc. Mis conocimientos se basan en leer mucho sobre cerveza y en visitar cientos de cervecerías de todo el mundo. Empecé a escribir sobre todo esto hace unas décadas para varias revistas internacionales. Además, la desaparición/absorción de muchas pequeñas cervecerías en los años setenta y ochenta me incitó a participar en grupos de acción de consumidores para luchar por la diversidad, una fiscalidad justa, etc., tanto a escala nacional como europea.

La cerveza importa porque es el mejor lubricante social que existe. Es asequible y tiene el mayor universo gustativo de todas las bebidas alcohólicas.

¿Por qué participa como juez en la Copa Mundial de la Cerveza? ¿Qué significa para usted ser jurado en la Copa Mundial de la Cerveza?

La Copa Mundial de la Cerveza puede considerarse los Juegos Olímpicos de la Cerveza. No sólo los participantes, sino también los jueces tienen una formación internacional, y esto ayuda y sigue mejorando enormemente mis conocimientos sobre el mundo de la cerveza, a través de catas, charlas y debates.

¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

Tras licenciarme en Finanzas por la Universidad de Drexel, tenía un conflicto. ¿Debía aceptar "cualquier" trabajo en el que mi formación y mis conocimientos se vieran recompensados con un sueldo, o debía ampliar mi base educativa con conocimientos prácticos en un sector único sobre el que me interesaba aprender más?

Mi interés por la elaboración de cerveza comenzó como cervecero casero y se avivó cuando empecé a trabajar como camarero en un pub cervecero mientras estudiaba en la universidad, lo que me introdujo en la elaboración de cerveza a microescala, mayor que la elaboración casera pero menor que la "gran cerveza". Mi primer trabajo en la industria fue como ayudante de cervecero en una cervecería emergente en los tranquilos suburbios de las afueras de Filadelfia, lo que al principio dejó perpleja a mi familia hasta que me oyeron contar historias de mis primeras semanas y supieron que había encontrado mi pasión.

Con el tiempo, mi formación me fue atrapando y me fui abriendo camino fuera de la fábrica de cerveza para desempeñar diversas funciones comerciales, empezando con la cerveza, luego con las materias primas (lúpulo, malta) y finalmente con las latas de aluminio impresas y brite, donde trabajo felizmente en la actualidad con el equipo de envasado de Zuckerman Honickman.

¿Por qué participa como juez en la Copa Mundial de la Cerveza? ¿Qué significa para usted ser jurado en la Copa Mundial de la Cerveza?

El proceso de juzgar cervezas me permite explotar mis habilidades sensoriales, que desconocía hasta hace unos años, cuando me convertí en juez del Programa de Certificación de Jueces de Cerveza y administrador de exámenes para mi club local de cerveza casera. Al haber estudiado marketing durante mis años de licenciatura, era muy consciente de cómo la marca, las etiquetas y el envasado pueden influir en la demanda de los consumidores y en las ventas. Dejar todo eso a un lado y centrarme únicamente en la cerveza me pareció fascinante.

Los estilos de cerveza son relatos históricos de una época y un lugar en los que se originaron. Ofrecen una visión de esa época en la que se trabajaba con lo que la tierra ofrecía y se jugaba con lo que tocaba. Los cerveceros jugaron su mano en todo el mundo creando las docenas de estilos de cerveza con innumerables atributos y características que tenemos hoy en día. Esto se suma a la historia que sus sentidos pueden contarle sobre el viaje de una muestra de cerveza específica hasta su vaso de muestra.

Para mí, la Copa Mundial de la Cerveza representa la cúspide de las oportunidades como juez y estoy muy agradecido y orgulloso de formar parte de esta comunidad de jueces de cerveza y de relacionarme con gente tan increíble e interesante de todo el mundo.

¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

I am part of the second generation of a brewing family in Peru that started in 2003. My parents taught me the art of making beer when I was 9 years old, studying and learning from it. This is how I fell in love with that passion, with its community, and everything that revolves around it. Over the years I have founded projects such as the Latin American Craft Beer Cup, Peruvian Beer Cup, Brewmart school, Brewpub Cebichela and my Two Broders Brewery. I also became a beer judge in 2014, participating in multiple competitions in Latin America. Beer matters to me, because it is part of the story of my family, of my life and it has taught me a lot over the years. I feel respect, admiration and I work hard to share with others how important it is, that they learn to value it, but above all to understand it.

¿Por qué participa como juez en la Copa Mundial de la Cerveza? ¿Qué significa para usted ser jurado en la Copa Mundial de la Cerveza?

I always dreamed of being part of the World Beer Cup, ever since I was young I always admired everyone who was part of it, and the experience one must have to be chosen for this great competition. I always followed in detail each event organized by the Brewers Association, learning from it and using it as a reference for the Peruvian market.

I judge beers in this competition, because it brings together the best beers and breweries in the world into one place. The level of analysis and professionalism that exists in each tasting session is incredible. Since beers are of a high level, it allows you to have different points of view and understanding about the every beer. You get to meet judges from all over the world! This is a very reason important reason for me to be part of it, get to know different cultures, exchange ideas, they make me personally a better person every day.

I am very happy to be part of this great competition that marks important milestones in the history of beer worldwide.

¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

After a long wait, I got to brew my first homebrew batch with friends in China, where I had some incredible beer mentors from Germany and the U.S. That later became an income, we would sell beers with our homebrew club at festivals, and later with our own homebrewery, I later got hired at a Chinese brewpub, which was my first pro job. Experimentation has always been my favorite thing about beer, luckily, when I started brewing professionally the breweries where always open for my experiments, which made me grow as a brewer. I later founded my brewery Experimento Cervecero in Costa Rica, which is now evolving from a small industrial brewery to a largely self-sustainable farmstead brewery.

Beer is about community and that has always inspired me, most times when you meet a brewer you kind of get a new friend, who knows what you’ve been through; and more often than not, the collaboration spirit is on. Sharing a passion and sharing a beer is always a great feeling.

¿Por qué participa como juez en la Copa Mundial de la Cerveza? ¿Qué significa para usted ser jurado en la Copa Mundial de la Cerveza?

It has been a dream come true to judge at the WBC, I would dare say the pinnacle of a judging career. I judge to learn and share knowledge and the WBC is a great avenue for this. The diversity of beer, both in style and origin is incredible, and tasting beer from all over the world is always very rewarding and exciting. The judging panel is the top of the industry worldwide, so meeting the people and sharing stories was a definite treat. Judging at the world beer cup was a clear goal when I started brewing and later on judging, and getting to do it was a great feeling.
