I entered the world of craft beer in 2013 by opening Malta’s first craft brewery. The beauty of making craft beer is that you can experiment with many styles, and we do, using as many local ingredients as possible. In 2016, we brewed the world’s first Gose using caper flowers as dry hopping and sea salt from local cliffs. We also invite the world’s leading breweries to Malta, combining ingredients from their countries with our local ones.

The philosophy of my brewery is to use the best machinery available on the market to ensure consistency while still producing unpasteurized beers. I believe it is impossible to achieve this goal without technology.

Being a judge at the World Beer Cup is a great thrill and a point of pride to be on the panel with the best judges from around the world. Ever since I founded the brewery, the World Beer Cup has always been a milestone. It is the most prestigious beer competition in the world, and representing Malta for the first time in this competition is a great privilege and honor for me.

I’ve worked in beer industry since 2004, first as a beer taster (sommelier), then as a brewmaster in biotechnology and science. For 15 years I’ve been teaching the new guys “how to taste beer” in a sommelier course in ESCM and at Doemens achademy in Brasil. Beer is my priority and unconditional love.

The World Beer Cup is the most refined world competition, with the best selection of judges. It is a pleasure to be part of this event, sharing knowledge to the market. The exchange of experiences between everyone who participates is the solid basis that motivates me to participate since 2014. This competition is the best way to celebrate all the values ​​that beer represents in our society!

Beer is a love story in every sense. I fell down this rabbit hole on my honeymoon in Prague, over a glass of dark Czech lager, and I’ve continued my journey ever since. It started as a hobby, but it became a job, an educational vocation, and so much more. Like any relationship, there have been highs and lows, but the beer industry, the drink itself, and the people involved never cease to amaze me.

It’s more than just a set of flavors—it’s a collection of stories, emotions, memories, and experiences. That’s what makes it so exciting. Not all stories have a happy ending, but we’re here to change that and make the industry better.

Judging at the World Beer Cup is a roller coaster of emotions. It’s a huge responsibility to do justice to an overwhelming number of beers. It’s an uplifting feeling to represent your country with pride. It’s an immense joy to meet and learn from the best peers in the beer world, having countless meaningful conversations. It’s a lot of fun, but everyone takes it very seriously. The amount of knowledge and experience in the room is outstanding.

Winning a medal at the WBC means going through rigorous assessment and reaching the podium with flying colors. It’s a reason for every winner to be proud and to celebrate their work and team effort.

Come è entrato nel settore della birra? Perché la birra è importante per lei?

Ero un appassionato di apprendimento e ho iniziato a produrre birra in casa a 17 anni. Il mio primo lotto di birra (kit e chilo) aveva un controllo della temperatura molto scarso e dimostrava una mancanza di comprensione della birra da parte mia... Era assolutamente terribile. Da allora ho cercato di imparare il più possibile sulla birra, sull'industria, sugli ingredienti e sulle persone coinvolte. Questo viaggio mi ha portato ad attraversare 23 paesi diversi e ora sono stato coinvolto in oltre 50 birrifici in tutto il mondo.

Giudico alla World Beer Cup perché desidero condividere ciò che ho imparato nel settore. Lo faccio per poter fornire il mio feedback, laddove possibile, e per imparare ulteriormente, per conto mio, gli stili di birra. Ho l'opportunità di incontrare i colleghi giudici che possono fornire un ulteriore feedback sullo stile di birra giudicato.

Cos'altro vorresti che il mondo sapesse?

Questo settore è in rapida evoluzione, con la quantità di scienza e informazioni aggiuntive che arrivano quotidianamente. Una birra che arriva al secondo turno di questo concorso è già molto avanti. Ottenere un premio è un risultato incredibile per il birrificio coinvolto.
