Come è entrato nel settore della birra? Perché la birra è importante per lei?

Vent'anni fa, in Giappone, non ho avuto la possibilità di assaggiare la diversità della birra artigianale. Durante un viaggio di lavoro negli Stati Uniti, sono rimasto totalmente scioccato dalla qualità, dall'aspetto, dall'aroma e dal sapore della birra artigianale. Dopo quell'esperienza, sono entrato a far parte della Craft Beer Association e mi sono reso conto che l'educazione è importante per comprendere il valore della birra; che la qualità delle birre è fondamentale per migliorare i momenti e che la collaborazione tra le associazioni e i concorsi globali è importantissima. Ora contribuisco come insegnante e responsabile dei concorsi per l'International Beer Cup in Giappone e per il Japan Great Beer Awards.

La mia prima World Beer Cup è stata a San Diego nel 2012. Volevo contribuire a questo settore assaggiando grandi birre e commentando le loro innovazioni. Essendo un asiatico, volevo anche condividere la mia esperienza locale con la birra e i giudici. Inoltre, volevo sperimentare una competizione di livello mondiale per imparare e migliorare i nostri concorsi in Giappone.

Come è entrato nel settore della birra? Perché la birra è importante per lei?

Come la maggior parte dei birrai, ho iniziato come homebrewer e ho deciso di offrire più sapore alla gente avviando il mio birrificio. Per farlo, dovevo capire e conoscere gli stili di birra e assaggiarli, così ho studiato e viaggiato per assaggiare ogni stile di birra. Questo mi ha portato a ottenere le credenziali del Beer Judge Certification Program e del Cicerone, che ora mi aiutano ogni giorno nel birrificio.

Giudicare la World Beer Cup è come giudicare alle Olimpiadi. È un'enorme competizione in cui sono rappresentati i migliori tra i migliori. La sfida di trovare la birra appropriata per lo stile in ogni volo è incredibile ed è un ottimo allenamento per sviluppare le mie capacità di degustazione e, naturalmente, per aiutare i produttori di birra a comprendere il loro prodotto.

My journey into the beer industry began with homebrewing in Brisbane, Australia, over a decade ago. This led me to undertake a course in brewing science at Ballarat University, and eventually complete a master’s in brewing science at Nottingham University. My passion for beer and brewing education has driven my career path, leading me to also become the first Australian Master Cicerone. This journey from homebrewing to professional brewing, has taken me all over the world and eventually to my current role as global director for beer passion and beyond-beer innovation at AB InBev.

Beer matters to me because it represents a perfect blend of art and science. It’s a product that brings people together, fostering a sense of community and shared experiences. Through my education and career, I’ve come to appreciate the intricacies of brewing and the cultural significance of beer. It’s not just a beverage; it’s a way to connect with history, traditions, and people from around the world. The continuous evolution and innovation within the beer industry keep it exciting and inspiring for me.

Judging at the World Beer Cup allows me to contribute to the global beer community by recognizing and celebrating excellence in brewing. It’s an opportunity to support the industry by providing valuable feedback to brewers, helping them improve and innovate. Judging also keeps my sensory skills sharp and broadens my understanding of different beer styles and brewing techniques. It’s a privilege to be part of such a prestigious event and to witness firsthand the diversity and creativity that brewers bring to the table.

Being involved in World Beer Cup is an honor and a responsibility. It means being part of a global community dedicated to the highest standards of brewing excellence. It’s a chance to taste and evaluate beers from around the world, learning from each one and contributing to the continuous improvement of the industry. For me, it’s not just about awarding medals; it’s about celebrating the passion, craftsmanship, and innovation that go into every beer.

Come è entrato nel settore della birra? Perché la birra è importante per lei?

I have always liked beer and my grandmother was a homebrewer.As a chemical engineer,I became more familiar with the fermentation process and the beer industry. After my graduation and a sommelier course, I decided to learn more about sensory analysis. I got involved with beer competitions and local homebrewers associations, including organizing competitions and conferences.I’m a master’s candidate in food engineering and beer science. I recently co-authored a chapter about pairing beer and food in Guia da Sommelieira de Cervejas (Beer Sommelier Guide), and co-authored a chapter about probiotic beer in Protocols in Technology of Probiotic Foods and Beverages for Springer Protocols. I’m also the technical advisor at the Regional Council of Engineering and Agronomy of Santa Catarina in Brazil. I am an active BJCP Certified judge and for the last 10 years I have judged in international beer competitions in Chile, Spain, Mexico, South Africa, Belgium, Argentina, and Uruguay. I’m the co-founder of Passaporte Cervejeiro, a company that organizes beer travel groups to Belgium. I have taught several courses in Brazil. Writing and cooking are my passions, and after five years as a columnist for Revista da Cerveja (Magazine of Beer), I now share recipes at my own website.

The World Beer Cup is one of the largest and most prestigious competitions in the world, and winning a medal there is celebrated as a significant competitive achievement. Being selected for the judging team is therefore a great honor and an achievement for beer professionals, as well as a great responsibility to select the worthiest beers from among the entries. Being part of the World Beer Cup is a great validation of my hard work, study, and preparation in the beer industry, and a wonderful way to use my beer evaluation skills.
