¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

De joven me fascinaba la fermentación del vino siguiendo a mi padre en su pequeña producción. En 1973 tuve la oportunidad de trabajar para una fábrica de cerveza italiana llamada Poretti Industries. Empecé en el laboratorio, y parte de mi trabajo consistía en colaborar con el director del laboratorio en la investigación del mal sabor de la cerveza. En aquella época éramos la única fábrica de cerveza de Italia que utilizaba la cromatografía de gases para hacer investigación básica en el sector cervecero. También trabajé para esta cervecera cuando fue adquirida por Carlsberg, pero mi pasión por la cerveza aumentó cuando empecé a interesarme por la producción de cerveza artesanal en Italia.

Creo que el renacimiento de la cerveza empezó en EE.UU. Ahora mismo, la Copa Mundial de la Cerveza es la que mejor representa la evolución de la cerveza, y lidera el movimiento cervecero en todo el mundo.

¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

I started homebrewing in Chile in 2000 and launched my own craft brewery in Santiago, Tübinger, in 2007. I’ve been a certified BJCP beer judge since 2014 and have judged at the world’s most important beer competitions, such as the World Beer Cup, Great American Beer Festival, European Beer Star in Germany, Brussels Beer Challenge in Belgium, World Beer Awards in the U.K., Blumenau Beer Cup in Brazil, and others.

I’m a co-founder and the current executive director of Chile’s Independent Craft Brewers Association, ACI Chile, since 2019, which has over 150 members from all over Chile. We’ve been organizing the yearly Great Chile Beer Festival and its beer competition, Copa ACI. During the dark years of COVID-19, I made the most of the downtime to write a book about beer history, beer culture, and beer styles. I’m proud to say that it has been quite successful, with two sold-out editions since 2021.

Beer has been part of my life since my student days in Germany, and I feel that I learn more every year about this beautiful beverage. I love opening people’s minds to the wide variety of beers, and there is still much to be done in that regard in Latin America.

Judging at the World Beer Cup is like being at the global center of beer experts, and it is always a pleasure and a great honor to share time, stories, and pints with the most accomplished brewers and beer judges in the world. This experience enables me to continue learning and improving my knowledge of beer tasting, new trends, and beer style appreciation.

It is also important for me to represent our relatively small country and emerging craft beer market at a global event and to spread the word about the increasingly vibrant Chilean beer market.

¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

My journey into the beer industry began as a hobby that eventually grew into a passion for both academic and craft brewing. As one of the first certified judges at the time, I opened a craft brewery and pursued a Ph.D. in the field, all while actively judging beers. These experiences allowed me to combine my love for brewing with my scientific curiosity. Over time, my interest in fermentation science deepened, leading me to focus on beer evaluation and sensory analysis. Today, I lead research projects at Fermentis, where I continuously explore the complex dynamics of yeast, fermentation, and flavor—an area that remains both challenging and rewarding in my career.

Beer matters to me because it represents much more than just a drink—it’s a blend of science, culture, and craftsmanship. With more than 15 years of experience evaluating beers and examining the intricate relationships between microbial dynamics and flavor expression, I have gained a profound appreciation for the creativity and precision that brewing requires. Beyond its technical aspects, beer connects people and tells a rich story of tradition and innovation. Being part of this ever-evolving industry is incredibly rewarding, and I feel fortunate to contribute to its growth and development.

Judging at the World Beer Cup allows me to contribute to the global beer community while applying my expertise in sensory analysis and beer evaluation. With more than 15 years of experience in the field, I’ve developed a deep understanding of the nuances in beer styles and flavor profiles, which I bring to the judging process. It’s also an opportunity to engage with other experts, share knowledge, and help maintain high standards of quality and innovation in the industry.

For me, judging at the World Beer Cup is both an honor and a responsibility. It’s a chance to be part of one of the most prestigious beer competitions in the world, where brewers showcase their passion, creativity, and technical skill. It also means helping to uphold the values of fairness and excellence in beer production. Personally, it’s a meaningful way to stay connected with the global beer community and to celebrate the diversity and craftsmanship that make the industry so vibrant.

¿Cómo entró en la industria cervecera? ¿Por qué le importa la cerveza?

Hace 20 años probé por primera vez una English Pale Ale y me quedé de piedra. Fue el momento en que descubrí la diversidad y riqueza de sabores de la cerveza. A partir de ahí pasé a beber todo tipo de cervezas artesanas japonesas y finalmente tuve la oportunidad de trabajar para las marcas que más me gustaban.

Creo que la cerveza es una bebida muy importante porque es una herramienta para vivir una vida relajada, y fomenta la comunidad y la conexión.

La cerveza artesanal es también una nueva gran forma de industria. El espíritu de trabajar juntos para crear un mercado, en lugar de que cada cervecera compita por él, es el aspecto más importante de la cerveza artesanal. Parece que representa una mejora con respecto a la actividad económica capitalista. Por eso me encanta trabajar en esta industria.

¿Por qué participa como juez en la Copa Mundial de la Cerveza? ¿Qué significa para usted ser jurado en la Copa Mundial de la Cerveza?

Me encanta el sector de la cerveza artesanal y quiero aportar mi granito de arena. Las sesiones de juzgamiento me dan consejos para mejorar mi elaboración y me lo paso muy bien con mis amigos jueces de todo el mundo: es una oportunidad insustituible para mí.

A la Copa Mundial de la Cerveza asisten algunos de los mejores cerveceros, periodistas y asesores, y conocerlos y compartir nuevas ideas e información es también una gran experiencia. Me siento muy afortunado de haber formado parte de este esfuerzo durante más de 10 años. Sin esta experiencia, nuestras cervezas serían hoy de menor calibre.

¿Qué más le gustaría que supiera el mundo?

La cerveza es sólo una bebida y no tiene poder para curar heridas o enfermedades. Pero nacemos en tiempos realmente difíciles, con mucho estrés, y beber una buena cerveza artesana es un oasis. También siento que la industria de la cerveza artesanal está adoptando un enfoque más democrático, artístico y orgánico de las cosas. Tengo la esperanza de que poco a poco hará del mundo un lugar mejor. Te animo a que busques cerveceros artesanos en tu zona que tengan un gran espíritu.
